WHERE AND WHO:
The Guerrero family has been farming coffee for three generations. They grows coffee in the small community of El Palto, Bellavista. From 2006 the farm is run by the current generation who is committed to high quality coffee thanks to the high investiment in new technology and new equipment which helps to control and replicate the coffee process. They also began to explore new variery and new infrastructure to reach the best quality production.

FROM THE CHERRY TO THE BEAN:
This particular lot of coffee follows the natural process. Once the cherries are hand harvest and carefully selected, are layed on raised bed to dry. During the drying process all the cherries are regularry turned to avoid mold and to ensure the perfect drying. 

ABOUT THE VARIETY:

CATUAI
Catuaí is a hybrid of Mundo Novo and Yellow Caturra developed by the Campinas Agronomic Institute (ICA) in Brazil  in 1949.  Arising in both yellow and red varieties, the cultivar is a high yielding, vigorous plant. Today, Catuaí forms the backbone of 50% of all the coffee varieties grown within Brazil. The name reportedly means ‘Very Good’ in Tupi-Guarani language.

Today, Catuaí is widely spread in Latin America. It is a common opinion that there is no difference in taste of the seeds from yellow and red berries, but some sources claim to prefer Red Catuaí.

The most stable taste quality of Catuaí is its sweetness, which is mainly dependent on adequate fertilization. Natural compost also intensifies the sweetness of the coffee and improves its overall taste.

BOURBON
The Bourbon variety was born when, in the early 1700s, French missionaries led by Captain Dufougeret-Grenier introduced a coffee plant on the island of Bourbon (now called Reunion). The new botanical variety born from this graft was introduced in Brazil and Africa in the mid-19th century. More productive than the Typica variety but less resistant to diseases. Usually the cup profile is very sweet and with a well balanced acidity to the taste.
